Drying Process Of Shiitake Mushroom:

The drying mushrooms process can be separated into 4 steps which are selecting, washing, drying, and storing. 

Selecting:

You should only select fresh shiitake mushrooms for the drying process as they will result in lower-quality products. Avoid those with bruises, mold, or insect damage. While smaller-sized mushrooms will result in better texture and flavor. 

Washing:

This step is to remove any dirt on the surface of the mushroom. Do not soak fresh mushrooms in soaking liquid as it will make the drying process harder and also affect the taste.

Use a soft brush to gently remove any dirt on the surface of the mushroom. After that, place them in a colander and let them sit for about 5 minutes until most of the water has dripped out before moving to the next step.

Drying:

Many methods can be used to dry shiitake mushrooms such as air drying, dehydrator, sun drying, and oven drying. Slice mushrooms into thin pieces before doing any of these methods as it will help to speed up the drying process.

Check your mushrooms from time to time as different it has different speeds of dehydrating food. Stop the dehydrating process once they are crisp enough to snap in half.

Oven Drying:

If you don’t have a dehydrator, the oven can be used as an alternative with a slightly longer drying time. (about 12-14 hours). Preheat your oven at its lowest temperature, which is around 200°F – 250°F before placing your sliced mushroom onto baking sheets(lined with parchment paper or aluminum foil) in a single layer form without touching each other).

Since ovens tend to have uneven heat, remember to rotate your baking sheets halfway through so that every piece will dry evenly. (check on them from time to time) Stop the drying process once they are crisp enough to snap in half

Storing:

After successfully drying your shiitake mushrooms, they need to be stored properly to maintain their crispiness and prevent mold growth. Store dried mushrooms in an airtight container like a glass jar or ziplock bag (make sure all air has been squeezed out before closing it tightly).

Keep them away from heat or direct sunlight as it will cause moisture condensation which can lead to mold growth inside the container over time. They can last up to 6 months under proper storage conditions but always check for signs of mold before consuming them. You can also store them in vacuum-sealed bags if you want them to last even longer (up to 1 year).
